These delicious and flavorful chicken burrito bowls are the perfect and healthy weeknight meal. They super easy to prep beforehand and assemble when it’s dinnertime. Serve these with my authentic pico de gallo and mango salsa for a flavorful meal.

Chipotle’s burrito bowls got me through college. They were my favorite budget-friendly meal. Now that they’ve gone down hill (and are raising their prices!), I say we make them at home. I love a burrito (I mean, hello, to my favorite breakfast burritos). And I love a bowl. This is the perfect match of those two things. I love making them with this flavorful chicken that I toss in my homemade taco seasoning and adding all of my favorite things. Let’s dive in!

Ingredients You’ll Need for this Chicken Burrito Bowl

Rice. I love having rice that I cook in homemade chicken stock/chicken bone broth for added flavor and health benefits.

Chicken. I like using boneless and skinless chicken breasts for this. Feel free to use boneless chicken thighs if you like.

Corn. If it’s the summer months, seek out fresh corn. If it’s the winter, I like using frozen corn.

Olive oil. We’re cooking the chicken in a pan with some good ol’ olive oil.

Beans. I love using pinto beans or black beans. Whichever you like!

Taco Seasoning. I love using my homemade taco seasoning to marinate the chicken. If you have a store-bought variety that you like, use that!

Mango salsa. I like lots of things in my burrito bowl. I’ll usually go for my fresh mango salsa recipe or my authentic pico de gallo. Both are delicious.

How to Make Chicken Burrito Bowls

I like to prep these ingredients a few or so in advance and eat a few burrito bowls.

Season the chicken. Start by tossing the chicken with salt and the homemade taco seasoning (or store-bought).

2. Cook the chicken. I warm up a tablespoon of olive oil over medium heat, add the chicken and cook on both sides for about 2-3 minutes.

NOTE: I always take a tester piece of chicken and cut it in half to ensure that it’s properly cooked.

3. Gather all of your ingredients. If you’re making a bit of an assembly line for guests to make their own bowls, I like to put everything in bowls.

4. Assemble the bowls. I like to add fluffy rice, a spoonful of corn, beans, pico de gallo, chicken and lettuce.

6. I like to finish it off by adding avocado slices, mango salsa and serving it with a side of chips (optional).

Other Variations

Use other types of protein. I think shrimp, beef (like a skirt steak a la carne asada), or fish would be delicious. Obviously cooking time may vary slightly but I have tossed the seasoning with shrimp and fish and cooked it in a pan and it’s been delicious.

Make it keto or Whole 30-friendly. By doing so, I’d eliminate the rice and replace it with cauliflower rice.
