- 3 tbsp coconut sugar
- 1¼ tbsp corn starch
- 1 tsp vanilla extract pure

Preheat your oven to 180°C (350°F) and line a large baking tray with parchment paper.

In a mixing bowl, toss together sliced peaches and strawberries with coconut sugar, cornstarch, vanilla extract, and crushed cardamoms. Mix until well combined. Place in the fridge until it's time to assemble your galette.

Lay out 8 sheets of filo pastry and slice them lengthwise into three equal strips using a pizza cutter.

Take one strip of filo pastry, place it on a baking tray, and lightly brush it with melted butter. Be careful not to overdo it—keep the butter layer thin.

Take another filo strip, lay it at an angle over the buttered strip, and gently brush it with butter.
