This Air Fryer Sweet Potato Cubes recipe has your back when you need a quick, healthy, and delicious potato side dish with dinner. The sweet potatoes are chopped into cubes and tossed with a mix of savory, smoky, and salty seasonings, then cooked in the air fryer until they’re crisp on the outside and pillowy soft on the inside.
The best part? Cooking sweet potato cubes in the air fryer takes half the time it takes to roast them in the oven. The process takes less than 15 minutes from start to finish and is mostly hands-off!
Ingredients

How to cook sweet potato cubes in the air fryer
Place the sweet potato cubes in a large bowl and drizzle them with olive oil. Sprinkle the spices over the top and toss until well-coated. 
Spread the seasoned cubes in a single layer in the air fryer basket (you may need to cook them in batches) and cook until every piece is perfectly crispy and golden, giving the basket a good shake a couple of times during the process.

Serve the sweet potatoes with your favorite main dishes or dipping sauces and enjoy!
Tips and tricks

Peeling the potatoes is up to you! Peeled sweet potatoes will be softer and the seasonings will stick better. Or, you can leave the skin on for extra fiber and nutrients. Just make sure to wash the sweet potatoes very well before chopping and cooking. 
Use a sharp chef’s knife to easily slice the sweet potatoes into uniform ½-inch cubes.
For the crispiest sweet potatoes, toss the cubes with 1 tablespoon of cornstarch before adding the oil and seasonings. The cornstarch clings to the outside and forms a crispy crust around the potatoes in the air fryer.
For even cooking, lay the potatoes in a single layer in the air fryer basket. If they’re crowded or overlapping, air fry them in batches to prevent them from cooking unevenly.

The total cook time will depend on your air fryer and the size of the potato cubes. My sweet potatoes took between 10 and 12 minutes to cook through at 400ºF. 
Can I cut the sweet potatoes ahead of time?
Absolutely! You can cut the sweet potato cubes up to 1 day in advance and store them in an airtight container in the fridge. Season and air fry the potatoes as normal when you’re ready to eat. 
Storing
Sweet potato cubes are best served fresh from the air fryer because that’s when they’re the crispiest. However, if you have leftovers, store them in an airtight container in the fridge for up to 3 days. 
To reheat, pop them back in the air fryer at 350°F for 3 to 5 minutes or until they’re warmed through and crispy again.
