If you grew up in a Pillsbury toaster strudel household then you know just how delicious these buttery, flaky pastries can be. And they’re even tastier homemade than the frozen version. We still used store bought puff pastry so don’t worry–they’re still super easy to make. But that fresh, juicy apple filling makes these taste seriously gourmet. Finish them off with a drizzle of maple glaze and you’re day is off to a very good start.

What do you need to make these cinnamon apple toaster strudels?

These toaster strudels come together with a surprisingly short ingredient list. Most of them you’ll have lying around for your fall baking needs, so hopefully your trip to the store isn’t too heavy. You can grab a pack of the puff pastry in the frozen section of your local grocery store and have on hand for whenever you need!

These homemade toaster strudels may taste fancy, but they’re actually incredibly simple to make. You’ll cook down a fresh apple filling, roll out the puff pastry, assemble and fill the pastries, bake them off, glaze them, et voila–cinnamon apple toaster strudels! We’ve rounded up our insider tips and tricks for you to make these as easy as can be.

  • Thaw your puff pastry out fully: This can be a devastating mistake. If you try to unfold your puff pastry before it’s completely thawed it will crack and break apart–not what you want. Make sure to let it thaw out completely on the counter before unfolding and rolling it out!
  • Make the apple filling ahead of time: If you want to break up the work you can make the apple filling up to 5 days in advance. If you do make it all at once, just let the filling cool for a few minutes so it’s not too hot when you’re working with it!
  • Seal the edges well and make an airvent: You’ll want to use a fork to press down the edges of the puff pastry to seal all that filling in there! Also be sure to poke an air hole in the top layer of the puff pastry to let steam to release!

How to store these cinnamon apple toaster strudels

These toaster strudels keep well for up to 7 days when stored properly. I like to store them in the fridge for best results. Keep them in an airtight container or plastic bag and heat up in a toaster oven or the oven when you’re ready to eat one! You can heat them at 375°F for 10 minutes or until warm to the touch! They’re best hot!

Can you freeze them? Yes you sure can! If you’re planning on freezing your toaster strudels we recommend keeping them unfrosted. The glaze can get a little funky when it defrosts. When ready to eat you can thaw them out, heat up in your oven or toaster oven and then glaze! You can also

For the toaster strudels

  • 2 large apples (we used granny smith!)
  • 1/2 cup packed light brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 sheets puff pastry, at room temperature
  • 1 large egg (for egg wash)

For the maple icing

  • 1 cup powdered sugar
  • 1 tablespoon maple syrup
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • heavy pinch of salt

Instructions

  1. Preheat the oven to 400°F degrees. Line two baking sheets with parchment paper. Set aside.
  2. First, make the apple filling. Peel and core the apples and dice into small cubes. In a saucepan over medium heat combine the apples, brown sugar, cinnamon, nutmeg, ginger, butter, flour, and lemon juice. Cook until the apples are tender, about 7 minutes. Remove from the heat and set aside to cool.
  3. Place one sheet of the thawed puff pastry on a lightly floured surface and unfold it. Cut into 6 equal rectangles and transfer to your prepared baking sheet.
  4. In a small bowl whisk together egg with about 1 tablespoon of water. Lightly brush the outside edge of each rectangle with the egg wash and then place about 1 tablespoon of the apple filling into the center of each rectangle.
  5. Roll out the second sheet of puff pastry and cut into 6 equal rectangles. Place the rectangles on top of each of the bottom rectangles, gently pressing the edges down with your fingers. Use a fork to press down all around the edges to really seal the edges together. Use the fork to poke the top of each puff pastry a few times to allow steam out. Brush the tops all over with the egg wash.
  6. Bake until golden brown all over and puffed up, about 18 to 20 minutes. Allow to cool slightly.
  7. While the toaster strudels cool make the glaze. Combine all the maple icing ingredients in a bowl and whisk to combine. The icing will be thick! Place in the microwave for 15 seconds to warm up and thin the glaze out (this will help it to harden!). Drizzle over the strudels. Let the glaze set and then dig in!
